Cashew Burfi (sweet) - A do it yourself Video

Made Cashew burfi for Deepavali sweet this year and it came out great!

Have been refining this recipe over the years with different results but we are locked into this final recipe.

Turns out the 4:3:2:1 ratio for select burfi's that my Lalli chitti taught me 20 years ago works for Cashew burfi as well!

We got a 100 pieces or so. 

Some notes before the video:

1. What you don't see in the video is that I doubled all quantities. (you see 200 grams of cashew or 2 cups of broken cashew being ground.. there was another identical batch added to the mix before heating)

2. This process is very very labor intensive. There is a lot of stirring almost 40 minutes of stirring on low heat and the last 10 minutes is extremely challenging. The thing is so thick that stirring it is difficult, but stir you must or it will start browning. 

3. It is more art than science when it comes to realizing "pour time". If you pour too early, it will be like a Halwa and will be a little gummy to eat. If you pour too late, the whole thing is hard and tastes like brittle candy or it has pieces of brittle hard stuff embedded in a matrix of the gummy stuff. That will taste good but kind of like having the almond noughats in chocholate texture.. The minute you start seeing the entire thing stick to your ladle and come off the pan as one blob, pour it! That is the secret.

The thing has to be just the right mix of crystallite stuff in an amorphous matrix..if you are a fab guy like me, think 550 C amorphous silicon!

The ratios are 4 cups broken cashew : 3 cups sugar : ~2 cups milk (do 1 1/2 or even 1 and it will work) : ~ 1 cup Ghee which is added while heating and mixing

Think 4-3-2-1 and go easy on the milk and ghee.

Also made some thenkuzhal (did it with the right flour mix this time!) and San made some delicious Gulab Jamuns. 

The litlte one doesn't like "nuts" except when converted to burfi's or Halwa's. 

Next year we will do a Badam Halwa.

RaRa VeNu Gopala - An Alto Saxophone performance

Jr. has been practicing RaRa VeNu Gopala on her Alto Sax on and off now. It started first week of October as an attempt to peform at Navarathri golus, but she got busy and never got past the first half.

Today she practised the whole thing and did it after 35 minutes of takes and retakes. 

She made me very proud today because she stuck to it and got it done. She had first given up on this because she learns Carnatic music (south Indian classical) with the Indian notation and all her Saxophone lessons are in sheet music and western notation! There is a big conflict in her head when she reads the notation because even the Indian notation is written in the English alphabet for her. When I was a kid used to learn with the notes written in Tamil alphabet.

So what happens? 

Sa Re Ga Ma Pa Da Ni Sa gets written in her book as S R G M P D N S

When I translate the carnatic notes for her to Western, I have to go with a G to G scale and write it as 

G A B C D E F G and the problem is G and D are there is both the representations.. poor thing had to practice it many times to get things going.

Now she is on a roll. Going to get some of her other favorite Tamil Songs converted to her notation so she can play it.

ps. On a side note, this is part of the basic Carnatic music lessons. Some guy is trying to claim Copyright to Raravenu Gopala and is claiming this is infringing on his copyright! Have filed a dispute. These days it is getting ridiculous.

Some things never change...

Jr. and the little one cannot be left alone for more than 60 seconds before a fight breaks out.

Somehow this has become the norm in the house these days. They go to different schools now and interact a lot less on a daily basis, but when they do.. all hell breaks in the house.. well, physically things are breaking during their fights.

There is also a competition of sorts for anything and everything.. 

Was wondering if things were always like this and got the answer during our bedtime "baby photos" session..

Yes!

Kitchen fun

Getting back in the kitchen more often these days, just on a whim!

Made some "Adai" with the little one for company. 

Adai : ~18 % protein (batter made from rice and lentils)

It is good to be back!

Daddy world

The second week of June is the most anticipated week for me. 

It involves three things..

1. Kids graduation from school.. or like we used to say when we were kids "last day of school"!

2. Father's day

3. Our wedding anniversary

We did the last day of school on Wednesday and it was special this year because Jr. finished Elementary school and moves to middle school next year.

This also marks a huge gap when the two girls will be in the same school. In the US we have 6th to 8th grade as Middle school and 9th to 12th grade as high school. In three years when the little one goes to middle school, Jr. will already be moving out of that school to high school. 

The last year of school for Jr. will be the next time they are both in same school and that is 6 years away. So we are back to two pickups, two drop offs and different school timings etc. Our hope is that Jr. becomes more responsible and starts walking or biking to middle school! 

Now.. Father's day is always nice. My kids give me the extra huggies and kissies and this year I already have my gifts. The school has a limit to creativity (and budget) for the father's day gifts. So guess what the little one gave me?

Same Frog! well, it does not seem to have any storage value given the small mouth but the little one tells me it is a paperclip holder.. Well, now my office will have two frog paperclip holders! Funny thing is I wont know who made what because they both have the same initials and they both were in Room 12 for 2nd Grade!

They also make me nice cards which really make my day! This year they put a lot of effort into it and was really happy to read /see what they gave me..

I did not get the boat and the caption first..

till she told me that I had to flip the flags over to see which my "Jobs" were!

As you can clearly see, my jobs are all non critical functions which involve the fishes and plants. In other words, I am a "Uppukku chappani" or the twelveth man in a cricket team. Nevertheless, yours truly is happy to play any role as part of the crew! 

The letter was clear but "What in Perumal's name is a woodly?" I asked and the reply was :

Daddy, I really wanted to say "you are cuddly like my cuddle bear, but what can I do?! There is no C in AWESOME! so I changed the W to say Woodly instead of Cuddly!" .  While the concept is baffling to me, the way she said it in all seriousness with her hands waving wildly will stay in my mind forever. 

Next was Jr's turn and she gave me this nice heart and card to put in my office! 

She painstakingly created the logos for the Yoga studio, my work etc and put them there. The cartoon of me on a yoga mat with a small water bottle cracked me up! 

They have both promised to behave their best tomorrow to celebrate Father's day.. will hold them to it, given yesterday evening and most of today was a blur with yet another migraine. Feeling good now after all that sleep. Daddy day promises to be interesting!

As for the third thing that makes our week, we have our Aussie relatives visiting us and it has been a blast! So we celebrate with a larger family this year!

It is just great to see the kids happy! 

We have now crossed two 7 year itches and still "itching for each other".. so that must be a good thing! There are no secret presents planned for San this year.  When the whole NSA Prism scandal came out, I realized that San knows every little move I make.. she has all the passwords for the credit cards, amazon, ATT sites etc. and I have none. No wonder I can never surprise her with anything!  

Maybe I will handcraft her a card that says "You are my NSA and I still love you!"
