South Indian Crispies - aka Javarisi VadAm

If you have guests for dinner and you are still cooking, one thing you can do is to get some papads, or Javarisi vadam's (made from Sago or Sabudhana), pop them in the microwave and give them as an appetizer of sorts.

This is a videoblog of how to make Javarisi VadAm from scratch.

Ingredients (or proportions)

For 1 1/2 cup Sago, 7 cups water, 2 medium size Indian (or Thai) short Chili's, 1 spoon salt, 1/4 spoon of Asafoedita (aka Hing), one small lemon

Also required : Saran wrap or plastic sheets, some oil to smear on the sheet if you are not using Saran wrap.


You can have fun giving the kids squirrel/Crow watching duty while the Vadam's dry in the sun.

Loved the video Sundar..waiting for the weather to get better so I can try making them...BTW, that's a very neat trick of dipping them in water before microwaving...I tried papads just by placing them in the micro but wasn't too pleased with the outcome...will try this tip now!! Thanks!!

wow you have lots of time in hand looks like. Btw they come out better in Summer when the weather is hot. Did it 2 years ago and stored them in air tight containers and kids are still enjoying them.

Our summers here in TX are made for vadam drying - half a day is enough!

BTW, if your allergies will allow it, spraying pam or dribbling a drop of oil over the vadam before microwaving makes them taste closer to the friend (i.e. heavenly!) versions!

I am from Chennai and love this crispy treat. This was such a lovely, quick and more importantly knowledgeable video of making vadams. And here I thought vadams take forever to make. My friend told me it takes too much time to mix and stuff. But you made it look super easy. What is even better is that microwave trick. Wow and thanks to you. I am going to try it out.

On a side note - to that reader who mentioned about "too much time on hand", hey, don't we all have the same 24 hours/day in hand? It is how smartly you utilize it that matters. Plus it was surprizing that from your perspective you thought Sundar had too much time on hand when the first thing I observed was his notable enthusiasm in trying a hand in the kitchen after working, spending time with kids, wife besides other 101 chores at home that we all do. I am sure we too get the time, just that we choose to do other things. I think he deserves some appreciation first. He made this activity not only to prove how simple home made stuff can be , not to mention the health aspect of it, but also proved that cooking can be fun with kids and as you can see, the kids enjoyed and had many questions too.

Thanks for the recipe Sundar. Keep them coming.

Anons, wrote a post to clarify..

Kavya, it is always a better idea to do this in summer.. so you get it dried in a day or two.. even Northern CA summers are not bad for this..

M, have played with dipping in water, water/oil mix, spraying with vegetable oil spray etc. etc

the best results are obtained with spraying a mist of water into the microwave after placing vadams/appalams in the microwave.

Your girls are all grown up, you are a lucky parent to have 2 healthy daughters , which was my dream ,I have a daughter .Just one .
I admire you for doing all this ,not whining about not having time, prioritizing stuff.
As for the person saying ,Sunder has too much time, perhaps you are not smart enough to utilize your time effectively ?
Don't write annoying comments here .

Sunder you truly are a smart guy and are lucky to have such super -o-super family .
